This involves looking at your business and identifying potential hazards that may affect staff or members of the public. Your restaurant risk assessment should tell you whether you\u2019re doing enough to mitigate these risks.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Restaurants, food and <a href=\"\/knowledge\/hospitality\/opening-a-takeaway-guide\/\" data-type=\"knowledge\" data-id=\"903\">takeaway businesses<\/a> need a rigorous risk assessment process. The number of hazards in the workplace is almost endless \u2013 ovens and deep fat fryers all pose clear risks, but some are less obvious. businesses:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"safety\">Safety<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">make sure food is <a href=\"https:\/\/www.food.gov.uk\/business-guidance\/safer-food-better-business\" rel=\"noopener noreferrer\" target=\"_blank\">safe to eat<\/a><\/li>\n\n\n\n<li class=\"wp-block-list-item\">don\u2019t add, remove or treat food in a way that makes it harmful to eat<\/li>\n\n\n\n<li class=\"wp-block-list-item\">make sure food is of the quality you say it is<\/li>\n\n\n\n<li class=\"wp-block-list-item\">don\u2019t mislead with <a href=\"\/knowledge\/hospitality\/food-labelling-regulations-for-small-businesses\/\" data-type=\"knowledge\" data-id=\"870\">labelling<\/a>, advertising or marketing<\/li>\n\n\n\n<li class=\"wp-block-list-item\">keep records of where you got the food from (and make sure you can produce these when asked) \u2013 this is also known as \u2018traceability\u2019<\/li>\n\n\n\n<li class=\"wp-block-list-item\">withdraw unsafe food and produce an incident report<\/li>\n\n\n\n<li class=\"wp-block-list-item\">inform people when food has been withdrawn or recalled, why it was withdrawn, and what they should do<\/li>\n\n\n\n<li class=\"wp-block-list-item\">keep your food <a href=\"\/knowledge\/hospitality\/how-businesses-can-get-5-star-food-hygiene-rating\/\" data-type=\"knowledge\" data-id=\"913\">hygiene rating<\/a> on display<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"additives\">Additives<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">only use approved additives<\/li>\n\n\n\n<li class=\"wp-block-list-item\">only use additives approved for use in that particular food<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"hygiene\">Hygiene<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">write a hygiene plan based on Hazard Analysis and Critical Control Point (HACCP) principles<\/li>\n\n\n\n<li class=\"wp-block-list-item\">make sure \u2018food contact materials\u2019 (including packaging, food processing equipment, cookware and surfaces) don\u2019t transfer anything to or change the food they touch<\/li>\n\n\n\n<li class=\"wp-block-list-item\">make sure you can show where your food contact materials came from, if inspected<\/li>\n\n\n\n<li class=\"wp-block-list-item\">follow the HACCP principles to protect food from bacteria (for example E.coli O157 and campylobacter, and salmonella)<\/li>\n\n\n\n<li class=\"wp-block-list-item\">take responsibility for staff hygiene training<\/li>\n\n\n\n<li class=\"wp-block-list-item\">manage <a href=\"\/knowledge\/hospitality\/food-labelling-regulations-for-small-businesses\/\" data-type=\"knowledge\" data-id=\"870\">food class=\"wp-block-heading\" id=\"guidancefromthehseonhealthandsafetyinthekitchen\">Guidance from the HSE on health and safety in the kitchen<\/h3>\n\n\n\n<div id=\"nba-body-001\">\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\">The Health and Safety Executive (HSE) has published guidance and templates for businesses carrying out their first risk assessment. It includes standard layouts for risk assessments and health and safety in a kitchen policies, which you can fill in with the relevant information.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Alternatively, many restaurants and kitchens choose to hire a health and safety specialist with knowledge of the catering sector to carry out a risk assessment for them. This can be beneficial in the long term, as a professional with kitchen health and safety expertise can often point out hazards and risks you\u2019ve missed.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"healthandsafetyrulesinthekitchenareoftencommonsense\">Health and safety rules in the kitchen are often common sense<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Kitchen health and safety rules are in many cases common sense. It\u2019s likely that you already run, or are planning to run, a safe restaurant. However, it\u2019s important that you develop a comprehensive health and safety in catering and hospitality policy, which demonstrates how hazards and other issues need to be dealt with. You\u2019ll also need to produce this policy for an inspector if (and when) the council decides to visit.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"whoneedsafoodhygienecertificate\">Who needs a food hygiene certificate?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In the UK, food handlers don&#8217;t have to hold a hygiene certificate to prepare or sell food. However, businesses dealing with food carry multiple responsibilities. From food safety to hygiene and inspections, the best place to start for guidance is <a href=\"https:\/\/www.gov.uk\/food-safety-your-responsibilities\" rel=\"noopener noreferrer\" target=\"_blank\">gov.uk&#8217;s food safety hub<\/a>, as well as the <a href=\"https:\/\/www.food.gov.uk\/business-guidance\" rel=\"noopener noreferrer\" target=\"_blank\">Food Standards Agency&#8217;s (FSA) business guidance<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Currently, employers are responsible for all staff hygiene training. This can be on-the-job and informal, or part of a structured programme, but ensuring it&#8217;s in place and appropriate for your line of business is a legal requirement.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"coronavirushowdoesitimpactrestauranthealthandsafety\">Coronavirus \u2013 how does it impact restaurant health and safety?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">According to gov.uk, it\u2019s very unlikely that someone can catch coronavirus from food. This is because it\u2019s a respiratory illness, and not currently known to be transmitted from food or packaging.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That said, it makes sense to follow stringent health and safety practices and limit your business\u2019 exposure to coronavirus as much as possible. Here\u2019s guidance from <a href=\"https:\/\/www.gov.uk\/government\/publications\/covid-19-guidance-for-food-businesses\/guidance-for-food-businesses-on-coronavirus-covid-19\" rel=\"noopener noreferrer\" target=\"_blank\">gov.uk<\/a>, with a coronavirus-specific health and safety restaurant checklist:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"followthegeneralguidance\">Follow the general guidance<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">any food handler who\u2019s unwell shouldn\u2019t be at work<\/li>\n\n\n\n<li class=\"wp-block-list-item\">anyone handling food should wash their hands often with soap and water for at least 20 seconds (they should also do this before\/after handling food,  after being in a public place, blowing their nose, coughing or sneezing)<\/li>\n\n\n\n<li class=\"wp-block-list-item\">food business operators should follow the FSA\u2019s guidance on good hygiene practices, and\nthey should also follow their HACCP process (see 16 restaurant health and safety responsibilities above)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"bevigilantonsymptoms\">Be vigilant on symptoms<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">If you or any food handler has any of these symptoms, you should self-isolate:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">a new, continuous cough<\/li>\n\n\n\n<li class=\"wp-block-list-item\">a high temperature<\/li>\n\n\n\n<li class=\"wp-block-list-item\">a loss of (or change in) normal sense of smell or taste (anosmia)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"knowyourfoodhygieneguidance\">Know your food hygiene guidance<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">follow a Food Safety Management System (FSMS) which includes <a href=\"https:\/\/www.food.gov.uk\/business-guidance\/food-hygiene-for-your-business\" rel=\"noopener noreferrer\" target=\"_blank\">existing food hygiene guidance<\/a> and HACCP processes (see above)<\/li>\n\n\n\n<li class=\"wp-block-list-item\">stress the importance of more frequent handwashing and hygiene practices<\/li>\n\n\n\n<li class=\"wp-block-list-item\">clean and disinfect objects and surfaces frequently<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"besensiblewithyourpackagingcleaningandwastedisposal\">Be sensible with your packaging, cleaning and waste disposal<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">According to the World Health Organization (WHO), it\u2019s unlikely that an infected person will contaminate commercial goods. However, gov.uk advise:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">efforts to clean and handle packaging in-line with the usual food safety practices<\/li>\n\n\n\n<li class=\"wp-block-list-item\">following existing risk assessments and safe systems of working<\/li>\n\n\n\n<li class=\"wp-block-list-item\">follow <a href=\"https:\/\/www.gov.uk\/government\/publications\/covid-19-decontamination-in-non-healthcare-settings\" rel=\"noopener noreferrer\" target=\"_blank\">coronavirus-specific guidelines<\/a> on cleaning and waste disposal<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"manageemployeesickness\">Manage employee sickness<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">if anyone develops symptoms in your business or workplace, you should send them home and advise them to follow the government\u2019s stay-at-home guidance<\/li>\n\n\n\n<li class=\"wp-block-list-item\">they (and you, if you\u2019re showing symptoms) should go to NHS 111 online or call 111, and 999 if they\u2019re seriously ill<\/li>\n\n\n\n<li class=\"wp-block-list-item\">anyone who\u2019s helped the person showing symptoms should wash their hands thoroughly<\/li>\n\n\n\n<li class=\"wp-block-list-item\">you don\u2019t need to close your business or workplace, unless the government\u2019s policy around symptoms in the workplace changes<\/li>\n\n\n\n<li class=\"wp-block-list-item\">keep monitoring gov.uk\u2019s <a href=\"https:\/\/www.gov.uk\/coronavirus\" rel=\"noopener noreferrer\" target=\"_blank\">coronavirus response hub<\/a> for updates<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"applysocialdistancing\">Apply social distancing<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">maintain a two-metre distance between individuals<\/li>\n\n\n\n<li class=\"wp-block-list-item\">use signage reminding customers not to come in if they have symptoms<\/li>\n\n\n\n<li class=\"wp-block-list-item\">regulate entry and avoid overcrowding<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">You can find lots more guidance on <a href=\"https:\/\/www.gov.uk\/government\/publications\/covid-19-guidance-for-food-businesses\/guidance-for-food-businesses-on-coronavirus-covid-19\" rel=\"noopener noreferrer\" target=\"_blank\">gov.uk<\/a> around social distancing in a food or catering workplace.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Gov.uk have stressed that their guidance is general, should be treated as a guide, and applicable legislation will always prevail if there\u2019s a conflict.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"thinkaboutbusinessinsurance\">Think about business insurance<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"\/business-insurance\/restaurant-insurance\/\">Restaurants<\/a> and food businesses have unique requirements when it comes to insurance. A single claim could cause you serious financial problems, so it\u2019s important to consider <a href=\"\/business-insurance\/public-liability-insurance\/\">public liability insurance<\/a>, which covers your business if a member of the public gets injured or ill and blames you.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"employersliabilityinsurance\">Employers\u2019 liability insurance<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">It\u2019s likely that your business legally needs <a href=\"https:\/\/www.simplybusiness.co.uk\/business-insurance\/employers-liability-insurance\/#why-is-insurance-important\">employers&#8217; liability insurance<\/a> if it has at least one employee. It protects you if your staff gets ill or injured as a result of working for you.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Most employers are legally required to have at least \u00a35 million of employers\u2019 liability cover, or face a fine of up to \u00a32,500 per day (although there are some exceptions).
