More generally this can include pollen or fungal spores. But when it comes to food, there are 14 major allergens that can cause allergic reactions.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you produce food and drink products that contain any of these allergens, you need to declare them in some way \u2013 we\u2019ll detail the steps you need to take later in this guide.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The major allergens are:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">celery<\/li>\n\n\n\n<li class=\"wp-block-list-item\">cereals that contain gluten \u2013 including wheat (such as spelt and khorasan), rye, barley, and oats<\/li>\n\n\n\n<li class=\"wp-block-list-item\">crustaceans \u2013 such as prawns, crabs, and lobsters<\/li>\n\n\n\n<li class=\"wp-block-list-item\">eggs<\/li>\n\n\n\n<li class=\"wp-block-list-item\">fish<\/li>\n\n\n\n<li class=\"wp-block-list-item\">lupin<\/li>\n\n\n\n<li class=\"wp-block-list-item\">milk<\/li>\n\n\n\n<li class=\"wp-block-list-item\">molluscs \u2013 such as mussels and oysters<\/li>\n\n\n\n<li class=\"wp-block-list-item\">mustard<\/li>\n\n\n\n<li class=\"wp-block-list-item\">tree nuts \u2013 including almonds, hazelnuts, walnuts, brazil nuts, cashews, pecans, pistachios, and macadamia nuts<\/li>\n\n\n\n<li class=\"wp-block-list-item\">peanuts<\/li>\n\n\n\n<li class=\"wp-block-list-item\">sesame seeds<\/li>\n\n\n\n<li class=\"wp-block-list-item\">soybeans<\/li>\n\n\n\n<li class=\"wp-block-list-item\">sulphur dioxide and sulphites (if they\u2019re at a concentration of more than ten parts per million)<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh7-eu.googleusercontent.com\/docsz\/AD_4nXcyBGvOA4oZcjwWmu3ETJqEiJJg_BbON-wS0D-TN5pJXiJCqmrilED3EtSYYvY8OCjO4AIUiHsSCIMSliwPTHsKFvbaX-XaMi_qSG-GPtRiH5kndEU-vGf9xvNhN8Pby5plMvJLn2q8IPDzUqtui8r7sdX4?key=taovXbqrN3j5jp_d3nTOqw\" alt=\"\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-allergen-labelling-on-food-products-natasha-s-law-and-other-legislation\">Allergen labelling on food products: Natasha\u2019s Law and other legislation<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">While Natasha\u2019s Law is perhaps the most famous piece of legislation to impact food product labelling, you should also be aware of. In 2014, European Union Food Information for Consumers Regulation (EU Reg 1169\/2011) came into UK law \u2013 as mentioned above, this required businesses to note if any of the 14 allergens mentioned above were included in pre packed food. This was retained post Brexit.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Owen\u2019s Law has been debated by the government, but isn\u2019t legislation yet.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-natasha-s-law-nbsp\"><strong>Natasha\u2019s Law&nbsp;<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The law was introduced in 2019 following the tragic death of teenager Natasha Ednan-Laperouse, who suffered a fatal allergic reaction after eating a baguette bought from Pret a Manger.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As the law didn\u2019t require sandwiches prepared on site to be labelled with allergen information, Natasha was unaware that the baguette contained sesame.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The law made it mandatory for businesses to label foods prepared on site with full allergen information. We\u2019ll go into more detail on this later in this guide.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-owen-s-law-nbsp\"><strong>Owen\u2019s Law&nbsp;<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Owen Carey\u2019s family launched their campaign in 2017 after he suffered a fatal anaphylactic shock while eating a chicken burger at a restaurant. Owen had communicated his severe allergies to front of house staff.&nbsp;<\/p>\n\n<div id=\"nba-body-001\">\n<\/div>\n\n\n\n<p class=\"wp-block-paragraph\">The campaign has been debated in parliament.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If it comes in, the law will force restaurants to clearly state the allergy information for all dishes they serve on their standard menu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-should-you-include-on-a-food-label\"><strong>What should you include on a food label?<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-prepacked-food-and-drink\"><strong>Prepacked food and drink<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Prepacked products have been packaged before reaching the site where they will be sold to customers. With these goods, there\u2019s no opportunity to communicate with customers before they buy, or change the contents without opening the packaging.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Food Standards Agency say that all prepacked food should have:&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">the name of the food<\/li>\n\n\n\n<li class=\"wp-block-list-item\">the ingredients<\/li>\n\n\n\n<li class=\"wp-block-list-item\">whether it contains any of the 14 allergens (or processing aids causing allergies and intolerances)<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">You have to present the allergen information so it stands out from the rest of the ingredients \u2013 for example, using bold font or a different colour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plus, if there\u2019s a risk of cross-contamination, for instance where a factory makes both nut and non-nut products, you need to declare that the product may contain the allergen (only after a thorough risk assessment has proven the risk can\u2019t be removed).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-non-prepacked-food-and-drink-natasha-s-law\"><strong>Non-prepacked food and drink: Natasha\u2019s Law<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">This is everything that\u2019s not been prepacked, along with food wrapped on the same site it\u2019s sold.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In 2021, Natasha\u2019s Law changed the rules around allergen labelling for products prepared and packaged on site.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Businesses now must label these products with a <strong>full ingredients list and allergen information.&nbsp;<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-examples-of-foods-covered-by-natasha-s-law\"><strong>Examples of foods covered by Natasha\u2019s Law<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.food.gov.uk\/business-guidance\/introduction-to-allergen-labelling-changes-ppds\" rel=\"noopener noreferrer\" target=\"_blank\">The FSA has a list<\/a> of example foods (as well as detailed technical guidance about the law) that count as prepacked for direct sale, to help you understand whether you need to label the products you sell:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">sandwiches and bakery products packed on site before a consumer chooses or orders them<\/li>\n\n\n\n<li class=\"wp-block-list-item\">fast food packed before it\u2019s ordered (like a burger under a hot lamp where the food can\u2019t be altered without opening the packaging)<\/li>\n\n\n\n<li class=\"wp-block-list-item\">products pre-packaged on site ready for sale (like pizzas, rotisserie chicken, salads and pasta pots)<\/li>\n\n\n\n<li class=\"wp-block-list-item\">burgers and sausages pre-packaged by a butcher on the premises ready to sell to customers<\/li>\n\n\n\n<li class=\"wp-block-list-item\">samples of cookies given to customers for free which were packed on site<\/li>\n\n\n\n<li class=\"wp-block-list-item\">foods packaged and then sold elsewhere by the same operator at a market stall or mobile site<\/li>\n\n\n\n<li class=\"wp-block-list-item\">prepacked food for sale given in schools, care homes, or hospitals and other similar settings will also need labelling<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-allergen-information-for-non-packaged-food\"><strong>Allergen information for non-packaged food<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Food that\u2019s not in packaging, or is packed after being ordered by the customer, doesn\u2019t need to be labelled.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But you do need to give clear allergen advice to your customers in an obvious place, like a menu. The allergen information can be written down or communicated verbally (but verbal information should be backed up in writing regardless).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Food Standards Agency state that you should:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">provide information about the allergens used<\/li>\n\n\n\n<li class=\"wp-block-list-item\">make sure the information is available in writing or by speaking to staff<\/li>\n\n\n\n<li class=\"wp-block-list-item\">use logos or symbols&nbsp; when accompanied by words and numbers on menus<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">The information should be easily accessible and accurate, consistent and verifiable. If it\u2019s not provided upfront, you should signpost where customers can find it.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If Owen\u2019s Law comes into force it will change the way in which allergy information needs to be displayed in restaurants.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-speak-to-customers-about-allergens-nbsp\"><strong>How to speak to customers about allergens&nbsp;<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Getting food labelling and allergen information wrong can be life threatening, so it\u2019s important it\u2019s clear and correct.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This means communicating with suppliers, staff, and your customers to make sure all the ingredients in the products you sell are recorded, and to make sure people with allergies are notified about what\u2019s in the products they buy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What\u2019s more, having clear information about allergens can be good for business. Research from the Food Standards Agency found that 59 per cent of young people go back to the same food outlet if they\u2019ve eaten safely there before.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are a few ways to make it easier for customers to find out what\u2019s in the food they\u2019re buying:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"wp-block-list-item\">train staff about allergens and how to check whether customers have allergies, ensuring they can give clear information<\/li>\n\n\n\n<li class=\"wp-block-list-item\">make sure all your recipes, menus, and labels have upfront information about the ingredients you use<\/li>\n\n\n\n<li class=\"wp-block-list-item\">have a process in place to update your information when you make changes to your recipes, letting staff know about the new ingredients<\/li>\n\n\n\n<li class=\"wp-block-list-item\">know your kitchen and the way you prepare food inside out, and keep the risk of cross-contamination low. If cross-contamination can\u2019t be avoided, tell your customers about the risk<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">There\u2019s lots of guidance on the <a href=\"https:\/\/www.food.gov.uk\/business-guidance\/allergen-guidance-for-industry\" rel=\"noopener noreferrer\" target=\"_blank\">Food Standards Agency\u2019s<\/a> own website, which we recommend reading to make sure you\u2019re completely clued up. You can also find more information about <a href=\"https:\/\/www.simplybusiness.co.uk\/knowledge\/hospitality\/how-businesses-can-get-5-star-food-hygiene-rating\/\" data-type=\"knowledge\" data-id=\"913\" >food hygiene ratings<\/a> in our guide.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-other-packaging-rules-nbsp\"><strong>Other packaging rules&nbsp;<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">According to the <a href=\"https:\/\/www.gov.uk\/food-labelling-and-packaging\" rel=\"noopener noreferrer\" target=\"_blank\">government&#8217;s website<\/a>, you need to use packaging that\u2019s suitable for food use. Suppliers will mark suitable packaging \u2018for food contact\u2019, or use a symbol that looks like a wine glass and a fork.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"945\" height=\"945\" src=\"https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg\" alt=\"\" class=\"wp-image-22481\" style=\"width:283px;height:auto\" srcset=\"https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg 945w, https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg?resize=150,150 150w, https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg?resize=800,800 800w, https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg?resize=768,768 768w, https:\/\/www.simplybusiness.co.uk\/wp-content\/uploads\/sites\/3\/2024\/07\/AdobeStock_800058294.jpeg?resize=96,96 96w\" sizes=\"auto, (max-width: 945px) 100vw, 945px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><em><a href=\"https:\/\/stock.adobe.com\/uk\/contributor\/207477843\/vdant85?load_type=author&amp;prev_url=detail\" rel=\"noopener noreferrer\" target=\"_blank\">Vdant85<\/a>\/Adobe Stock<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are <a href=\"https:\/\/www.food.gov.uk\/business-guidance\/regulated-products\/food-contact-materials-guidance\" rel=\"noopener noreferrer\" target=\"_blank\">certain rules<\/a> around using plastics, ceramics or cellophane for packaging.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You must have written evidence that you\u2019ve kept to these rules \u2013 this is called a \u2018declaration of compliance\u2019, available from your packaging supplier.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-can-insurance-cover\"><strong>What can insurance cover?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Having public liability insurance in place can protect you if someone does suffer an allergic reaction after consuming your products.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It won\u2019t cover you if you\u2019ve been negligent and haven&#8217;t followed food hygiene or labelling regulations. But if you\u2019ve followed the rules and a customer has a reaction to something that didn\u2019t need to be disclosed, <a href=\"https:\/\/www.simplybusiness.co.uk\/business-insurance\/public-liability-insurance\/\">public liability insurance<\/a> can cover the resulting claim and compensation costs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Is there anything more you want to know about allergen information?
